Estate agave is cooked in stone and brick ovens, roller-milled, fermented in stainless tanks with rum and champagne yeasts (and classical music, the brand's Mozart Method), and double distilled in copper pots, with every expression at 40% ABV (80 proof). The Añejo joined the range in December 2018 as a 24-month tequila aged in American bourbon oak, and the current Viva Mexico release is blended from French oak, American white oak, cognac, and bourbon barrels. The producer's notes describe chocolate, toffee, salted caramel, black peppercorn, honey, and vanilla, a smooth palate the brand compares to a mature cognac, and a long, creamy finish.
