Cenote Añejo Tequila

Cenote takes its name from the freshwater sinkholes of the Yucatán, and the blue bottle with its Mayan glyphs plays on that, but the tequila itself is pure Jalisco. It is made at Fábrica de Tequilas Finos, NOM 1472, in the town of Tequila at the foot of the Tequila Volcano, under master distiller Arturo Fuentes Cortés, a 35-year veteran who once distilled Cognac in France, with master blender Alejandro García Páez. The brand was launched by Stoli Group in 2018. The agave is 100% blue Weber; fermentation happens in stainless steel, distillation is double, in copper and silver pot stills, and the water comes from an artesian well on the distillery grounds, run through reverse osmosis, carbon and silver-ion filtration. The Añejo is aged one year in American oak bourbon barrels and bottled at 40% ABV. The distillery's tasting note is a smoky, woody nose followed by vanilla, spice and chocolate on the palate, with the cooked agave still present under the oak. It took a gold at the Spirits Business Tequila and Mezcal Masters. Sip it after dinner, neat or on one large cube, or build an Añejo Old Fashioned around it.
