Stellum Bourbon Black

Stellum Black is the premium tier of Stellum Spirits, the second label from Barrell Craft Spirits, the Louisville blender behind Barrell Bourbon, and it is blended and bottled in Louisville, Kentucky from whiskey distilled and aged in Indiana, Kentucky and Tennessee. The standard Stellum Bourbon is built on three Indiana mash bills, two of them high-rye and one almost entirely corn, with older Kentucky and Tennessee barrels folded in through a multi-step blending process. Black takes that blend as its starting point and adds older, lower-proof reserve stocks of Kentucky and Tennessee bourbon, with the emphasis tipped toward the oldest barrels, to push the depth and the oak further than the core release. It is bottled at cask strength and non-chill filtered, with the proof varying slightly by batch; the importer-listed bottling sits at 54.61% ABV (about 109 proof). Stellum's notes describe orange creamsicle, caramel corn and mixed peppercorns on the nose, charred orange, leather, cardamom and spiced nuts on a sweet palate, and a finish of Tootsie Roll and cedar.
